Slow Cooker Pulled Pork Dip

Serves 6 |
Ingredients:
3 lb pork butt roast |
2 tablespoons paprika |
2 tablespoons salt |
1 tablespoon ground pepper |
2 teaspoon garlic powder |
1 can stewed tomatoes, 14.5 oz. |
1 can corn, 15 oz. |
1 can refried beans, 16 oz. |
1/2 cup shredded cheddar cheese |
Chopped green onions, for garnish |
Directions:
- Combine the paprika, salt, pepper and garlic powder in a small bowl. Rub the pork roast with the spice mix. Place pork roast in the slow cooker bowl.
- Pour the can of stewed tomatoes over the pork roast. Place the lid on the slow cooker and lock shut. Set to high to cook for 4 hours or low for 7 hours.
- Set to warm and shred the pork roast in the slow cooker. Add the corn and refried beans. Stir together until combined. Let sit for 10 minutes.
- Transfer the dip to a large bowl. Sprinkle the shredded cheese over top and garnish with chopped green onions. Enjoy!
