BBQ Chicken Grilled Cheese Sandwich

Unlike any other grilled cheese.


1 tablespoon butter
2 slices bread, your preference
2 slices gouda cheese
2 slices cheddar cheese
1/2 cup chopped cooked chicken breast
2 tablespoons sliced red onion
1 teaspoon chopped cilantro
2 tablespoons BBQ sauce, your preference


  1. Butter once side of both slices of bread.
  2. Bring to medium heat.
  3. Place 1 slice of bread on a plate, butter side down. Place 1 slice of gouda and 1 slice of cheddar on the bread. Place chopped chicken, red onion, cilantro and drizzle on the BBQ sauce. Place the last slice of gouda and last slice of cheddar on top of the BBQ sauce, then lay the second slice of bread on top, butter side up.
  4. Place the sandwich into the skillet. Gently press down on the sandwich with a spatula and cook for about 2 minutes, until bread is toasted and golden brown. Flip sandwich and repeat process.
  5. Transfer the grilled cheese to a plate, cut in half and enjoy!
