Country Meatloaf

Serves 6 | 
A twist on the classic comfort food.

Ingredients:

2 tablespoons butter
8 oz sliced mushrooms
1 cup chopped onion
1 cup thinly sliced celery
3/4 cup shredded carrots
2 tablespoons water
2 lb ground round
1/2 cup flour
1 teaspoon salt
1 1/2 teaspoons seasoned salt
1/4 teaspoon dried tarragon
1 teaspoon dried parsley flakes
2 tablespoons soy sauce

Directions:

  1. Preheat oven to 350° F. Grease a baking pan with cooking spray
  2. In a skillet, melt butter over medium heat. Once melted, add mushrooms, onion, celery, carrots, and water. Bring to a boil, cover and cook for 10 minutes.
  3. In a large bowl, combine ground beef, flour, seasoned salt, tarragon, soy sauce, and the cooked vegetables.
  4. Mix gently and shape into a loaf in the greased baking pan
  5. Bake the meatloaf for 1 hour. (Top should be nicely browned)
Course: Dinner
