Country Meatloaf

A twist on the classic comfort food.
Ingredients:
2 tablespoons butter |
8 oz sliced mushrooms |
1 cup chopped onion |
1 cup thinly sliced celery |
3/4 cup shredded carrots |
2 tablespoons water |
2 lb ground round |
1/2 cup flour |
1 teaspoon salt |
1 1/2 teaspoons seasoned salt |
1/4 teaspoon dried tarragon |
1 teaspoon dried parsley flakes |
2 tablespoons soy sauce |
Directions:
- Preheat oven to 350° F. Grease a baking pan with cooking spray
- In a skillet, melt butter over medium heat. Once melted, add mushrooms, onion, celery, carrots, and water. Bring to a boil, cover and cook for 10 minutes.
- In a large bowl, combine ground beef, flour, seasoned salt, tarragon, soy sauce, and the cooked vegetables.
- Mix gently and shape into a loaf in the greased baking pan
- Bake the meatloaf for 1 hour. (Top should be nicely browned)
