Grilled Corn with Chili Lime Butter

Serves 8 | 
A delicious change from classic corn on the cob.

Ingredients:

8 ears corn, husks on
1 stick butter
2 tablespoons chopped fresh parsley
1 teaspoon chili powder
2 teaspoons grated lime
2 tablespoons fresh lime juice

Directions:

  1. Prepare corn for roasting. Carefully pull back, but do not detach the husks, and remove the silk. Soak corn in cold water for 30 minutes. While the corn is soaking, prepare the butter.
  2. Melt butter over medium heat in a small saucepan. Let it cool slightly, about 3 minutes. Add parsley, chili powder, lime rind and juice to butter and whisk until combined.
  3. Remove corn from water and pat dry. Using a pastry or basting brush, coat corn in butter. Carefully pull the husks back up over the ears and secure with string.
  4. Place corn on barbecue over medium-high heat turning often for about 15 minutes or until golden brown.
  5. Serve corn with remaining chili lime butter.
