Country Green Beans and Ham

A yummy side for any occasion.

Ingredients:

2 tablespoons olive oil
1 ham shank
3 lb fresh green beans, trimmed
2 cups thinly sliced yellow onions
Salt, to taste
Ground black pepper, to taste
Water, for boiling

Directions:

  1. Bring a large saucepan to medium heat, once hot add the oil.
  2. Season the ham with black pepper.
  3. Add ham to saucepan and cook for 2 minutes per side. Remove ham from saucepan, dice into small cubes and set aside.
  4. Add onions to saucepan and season with salt and pepper. Saute for 2 minutes.
  5. Add green beans and ham back into to the saucepan. Cover contents completely with water. Bring to a boil, once boiling, reduce heat to medium-low, cover partially and cook for 2-hours. Remove saucepan from burner, empty water and season with salt and pepper if necessary.
