Country Green Beans and Ham

Serves 8 |
A yummy side for any occasion.
Ingredients:
2 tablespoons olive oil |
1 ham shank |
3 lb fresh green beans, trimmed |
2 cups thinly sliced yellow onions |
Salt, to taste |
Ground black pepper, to taste |
Water, for boiling |
Directions:
- Bring a large saucepan to medium heat, once hot add the oil.
- Season the ham with black pepper.
- Add ham to saucepan and cook for 2 minutes per side. Remove ham from saucepan, dice into small cubes and set aside.
- Add onions to saucepan and season with salt and pepper. Saute for 2 minutes.
- Add green beans and ham back into to the saucepan. Cover contents completely with water. Bring to a boil, once boiling, reduce heat to medium-low, cover partially and cook for 2-hours. Remove saucepan from burner, empty water and season with salt and pepper if necessary.
