Homemade Cauliflower Pizza

Serves 1 pizza | 
A healthy alternative to traditional pizza.

Ingredients:

1 head cauliflower, stalk removed
2 eggs, lightly beaten
1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/2 teaspoon dried oregano
Desired toppings, cheese, pepperoni, etc.

Directions:

  1. Preheat oven to 400° F. Line a baking sheet with parchment paper.
  2. Break cauliflower into small pieces. Add cauliflower pieces to food processor or blender, pulse until cauliflower is fine. Transfer to paper towels and gently dab to remove moisture.
  3. In a mixing bowl, combine cauliflower, eggs, parmesan and mozzarella cheeses, salt, garlic powder and oregano. Mix together well.
  4. Transfer dough to baking sheet. Work and spread cauliflower dough into a pizza crust. Place baking sheet in oven. Bake for 20 minutes.
  5. Add toppings to pizza, bake an additional 10 minutes. Remove from oven, cut into slices and enjoy!
