Easy Meatloaf

A classic dinnertime recipe that's sure to please.

Ingredients:

1 tablespoon butter
3 celery ribs, finely chopped
1/2 onion, finely chopped
3 lb lean ground beef
2 tablespoons Worcestershire sauce
1/2 cup breadcrumbs
1/3 cup ketchup
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 eggs, lightly beaten
1 can tomato sauce, 8 oz.
3 tablespoons tomato paste
1 tablespoon ketchup

Directions:

  1. Preheat oven to 350° F.
  2. In a medium nonstick skillet over medium heat, melt butter. Add celery and onion and saute until just tender, about 7 minutes.
  3. In a large bowl, stir together celery mixture, ground beef, 1 tablespoon of Worcestershire sauce, breadcrumbs, 1/3 cup ketchup, salt, pepper, garlic powder and eggs.
  4. Shape mixture into a 10-X 5-inch loaf pan. Place loaf pan on rack. Bake for 45 minutes.
  5. In a bowl, stir together remaining tablespoon of Worcestershire sauce, tomato sauce, tomato paste, and 1 tablespoon of ketchup until well blended. Pour evenly over the meatloaf.
  6. Bake for an additional 10-15 minutes or until meatloaf is fully cooked through and no longer pink in the center. Let meatloaf stand 10 minutes before serving.
