Thai Fruit Salad

Serves 8 servings |
Sweet, healthy and super easy to make.
|1 1/2 cups fresh papaya, cubed|
|1 cup pineapple chunks|
|1 banana, sliced|
|1 cup mango, cubed|
|1 cup strawberries, sliced|
|1 cup fruit, (your preference)|
|for garnish starfruit slices|
|1/4 cup coconut milk|
|1 tablespoon lime juice, freshly-squeezed|
|2 tablespoon brown sugar or palm sugar|
- Stir the last three ingredients together in a cup until the sugar dissolves and set aside. Place all the fresh fruit in a mixing bowl.
- Pour the dressing over and toss well to mix. Pour the fruit salad into a serving bowl, or into a prepared pineapple boat and garnish with the star fruit slices.
